  •  6 (6-ounce) lean salmon fillets
  • Cooking oil spray
  • 1 tablespoon medium Dijon mustard
  • 1/4 cup packed brown sugar
  • 4 teaspoons sliced almonds, toasted
  • 1/4 cup maple syrup
  • 3 tablespoon slow sodium soy sauce
  • 1/4 teaspoon black pepper spice

Preparation of this speciality love dish

Preheat oven to 190° Celsius.

Place the salmon fillets in a medium sized oven tray coated with the cooking oil spray. Combine sugar, syrup, soy sauce, mustard, and black pepper; pour sugar mixture over the salmon fillets. Cover with cooking foil and bake at 190° for a further 10 minutes. Remove foil; sprinkle the fillets with the almonds. Bake in the oven for an additional 10 minutes or until the salmon pulls away easily when tested with a fork. Serve up with the prepared sugar mix.
